The 5 Element framework to health & nutrition has been around for centuries. It is not about eating Chinese or Asian cuisine, the fundamental principles of the 5 Elements in nutrition can be applied to all food cultures around the world.
There are an amazing number of nutrition courses out there in the world, and many approaches to cooking & nourishing ourselves. But not many with a focus on the 5 Elements.
We are entering an age of renewed reverence & reconnection with the elements of nature. In this unique online course we cover 5 Element food therapy, different styles of cooking, seasonal wisdom & dive into the energetics of the organs, layers of the body, and even implications for mood & emotional wellness.

Core Teaching Faculty:

ELLEN GOLDSMITH
Ellen Goldsmith, MSOM, LAc, DipCH, is a graduate of the National University of Natural Medicine’s College of Classical Chinese Medicine and has a Masters of Science in Oriental Medicine. She is licensed as an acupuncturist, is certified in Chinese herbal therapy and is cofounder of Pearl Natural Health, a naturopathic, acupuncture and Chinese medicine clinic.
Ellen teaches Chinese Dietetics and Cooking with Medicinal Herbs in the Classical Chinese Medicine program at the National University of Natural Medicine in Portland, Oregon.
She also speaks frequently on the value of understanding food as medicine from a Chinese medicine point of view at conferences and schools in the USA.
Ellen is the author of "Nutritional Healing with Chinese Medicine: +175 Seasonal Recipes for Optimal Health." One of the basic principles of Chinese medicine is that food and medicine are inseparable, her book shows you how to apply the ancient wisdom of Chinese medicine in your kitchen, no matter what your cultural tradition is.
MINDI K. COUNTS
Mindi K. Counts, MA, LAc., is an integrative medical practitioner and Five-Element acupuncturist. Founder of the Inner Ocean Center for Healing, Mindi is a keynote speaker, retreat leader and teacher. She is the author of "Everyday Chinese Medicine" and a contributing author to the "Trauma Toolkit" and "Singing Our Heart’s Song." She is the founder of the international nonprofit Inner Ocean Empowerment Project, providing holistic healthcare and education through volunteer service missions to underserved populations around the world and in the U.S. She has been featured in several publications including Dr. Oz’s The Good Life magazine for her work in Indian slum communities, Burmese refugee clinics and earthquake-ravaged areas of Nepal. Mindi is a graduate of Naropa University’s Contemplative Psychology program and holds a Master’s degree in Classical Five Element Acupuncture from the Institute of Taoist Education and Acupuncture. She lives with her family and rescued pit bulls in the foothills of Colorado, USA.


KIMBERLY ASHTON
Kimberly Ashton is a 5 Elements Wellness coach, cook, author & educator focusing on intuitive eating, food therapy and food energetics. She spent over 16 years in Greater China including Shanghai, 8 of which she co-owned China’s first health food store & teaching kitchen inspiring clients to restore their health through 5 element nutrition. After closing the store and classroom in 2017 she has been teaching Food Energetics & Food Therapy at Yoga teacher trainings and wellness retreats in Thailand, China, Japan & Australia.
In 2019 she published her second book “Chinese Superfoods” which encourages new generations of nutrition enthusiasts to explore Asian traditional foods, everyday ingredients & get back in the kitchen. It has sold over 7000 copies and is in its 2nd reprint in Mandarin Chinese. She is also the co-author of a TCM cookbook series which focuses on theory & recipes for each of the 5 elements and health imbalances.
She believes in the power of reconnecting with the elements and natural world, and realigning our individual & collective relationship to food, emotional & energetic health. She currently lives in Sydney, Australia.
